It seems like just last week, it was a balmy 69 degrees here in Connecticut. My kids and I we shed our jackets and rushed to the park to enjoy the day. It was so awesome to be outside, enjoying the weather.
Oh wait, that was last week. My, how things change. Mother Nature has since put down her foot and made it clear that winter is here. Right. Now.
When it's cold like this, with a bitter wind and icy temperatures, you can start to feel so, so cold – like you will never be warm again. And when that happens, there is only one solution: soup. Preferably of the homemade variety.
Earlier this week, I whipped up a batch of Butternut Squash Soup. It's rich and smooth, with notes of pumpkin pie. But it's more savory than sweet, and absolutely perfect with some crispy shallots. It's perfect for those awful winter days.
