I admit when a recipe has the word “vegan” in it, I usually run in the other direction. I consider myself a meat lovin’ girl and married a man who doesn’t consider it a meal unless some type of meat is present.

Recently, we had a dinner guest who was vegan and I thought, “What in the world am I going to feed her?” But as it turns out, our worlds are really not that far apart.

Quinoa was the answer. I’ve been dying to make a quinoa dish ever since all of my friends started raving about it. I’ve been butchering the pronunciation of the word “quinoa” for so long (pronounced “KEEN-wa” ) that I figured I owed it a retribution recipe to showcase it.

This Vegan Quinoa and Black Beans cooked up so fast and easy. It has black beans, corn, lime, and cilantro — all of the Mexican flavors that I crave so often.

Recipe for Quinoa

Although it’s appears and tastes grain-like, quinoa is actually a small seed. It’s full of nutritional benefits and is a complete protein in itself. That must explain why after I ate this dish I was stuffed!

Informing my protein-obsessed husband of its high protein level was all he needed to be convinced. I will say that my natural instinct was to add some grilled chicken to the recipe. But that was just my meat-ingrained mind thinking. The dish absolutely did not need it.

Recipe with Quinoa

Have I converted to a vegan now?

No. Not yet.

But this Quinoa and Black Bean dish sure did make me think about it…

How about you? Do you eat quinoa?

I found this salad a while ago and I thought it would taste great as a pepper stuffing. I make the salad without the avocado and cilantro. I boil my peppers for about 2 minutes and then I put them on a tray. I fill them with the salad and because I’m not vegan I top them with cheese and put them in the oven at 300 degrees fahrenheit. I wait untill the cheese melts, or until the outside of the pepper looks a little roasted. I take them out and garnish with cilantro. It is delicious.

I don’t cook it with the lime, just squeeze fresh on top with a little sour cream!

This is a recipe from allrecipes.com. Check it out there for MANY reviews. It is an awesome recipe, I use 1 cup broth, one can of diced tomatoes when cooking quinoa. Fresh tomatoes would be great too. The only difference in this recipe is the optional avocado. Pair with home made tortillas for a great dinner, tortilla recipes at allrecipes.com too! Just give due credit!

Made this tonight, and it is AMAZING. I added two chopped fresh tomatoes on the last step, cause that’s how I roll. Perfection. My husband loved it as well, as long as I didn’t remind him that it was vegan. LOL.

Darn! I’m allergic to cumin, cayenne, and black pepper. I wonder if it would be bland without those… Can’t add tomato, either. ARG. Stupid new-found food allergies. :( This looks totally yummy!

Yum, I make something similar…but I use a can of corn and instead of the cayenne, I throw in a can of Rotel tomatoes with jalepenos (or any other brand of tomatos with jalepenos)..DELISH! And if it’s a tad too hot for some, they can add a dollop of sour cream (diet permitting, of course)

This was FABULOUS! Even a hit with my meat-loving dad! The avocado was the perfect topping! I will definitely be making quinoa again!

Yum! I DO eat quinoa and I’m almost vegan (combination of dislike of milk and catering to my daughter’s food allergies – egg and milk). This looks great and LOVE the mexican flavours. Pig x
