Happy St. Patrick’s Day!

St. Patrick’s Day has me thinking green. Usually I start off the morning greeting my kids with a “top of the morning to you” in my best Irish accent. Then I serve them a breakfast of green eggs and ham and green milk to drink. Even though they probably think I’m a little crazy, they are pretty amazed by all of the green but refuse to eat it at the same time.

Since I don’t want them starving the entire day, I thought I’d make something I know they will eat — pizza — with a little Irish flair. These Shamrock Pizza Squares are a twist on traditional pizza with a creamy sauce and topped with green bell pepper shamrocks.

Green Pepper Pizza

This pizza has all of the colors of the flag of Ireland – orange, white, and green. The cream cheese added to the pizza sauce makes it a shade of orange, add some white mozzarella, and top it with vibrant green bell peppers and you are all set.

These Shamrock Pizza Squares are a fast and easy meal with the help of a Pillsbury pizza crust. That gives me more time to make sure my naughty little leprechauns don’t get into any mischief.

Christy, this is the cutest idea! I made two pizzas tonight for a group of 16-year-old boys. They ALL said, “This sauce is great!” They devoured it — “shamrocks” and all. Thanks for making our St. Patrick’s Day deliciously easy!
