Pancakes … With an Edge!
Pancakes, pancakes, pancakes. We are serious pancake lovers here, so I am always on the hunt for something to make ours a little more crave-worthy (not that they aren’t already!).
I especially love pancakes filled with fruit, since it adds a juicy burst of sweetness (and sometimes tartness), so we make those often at home.
But these Crunchy Berry Pancakes are different. They are special.
Filled with blueberries and raspberries (frozen ones, since they are a cinch to keep on hand), one side of the pancake is sprinkle with crushed Nature Valley Granola Bars. It adds a nice bit of crunchy texture to the pancakes that you wouldn’t necessarily expect.
I totally cannot take credit for the idea though. Tablespoon’s Erin made me drool, telling me about pancakes she’d had with granola cooked into one side. The idea of ordinary pancakes getting a slight crunch like that had me immediately swooning.
Nature Valley Granola Bars are perfect for this. I used the Oats and Honey flavor, but Maple and Brown Sugar or Cinnamon would be a good fit too.
And when you are serving these babies up, be sure to drizzle them with a really good maple syrup. I prefer Grade B, which is richer in flavor. You can also sprinkle a little extra crushed Nature Valley bar on top too.
