It’s getting colder out there, and it’s finally time to start eating all of those good chili and soup recipes.

I know everyone has a chili recipe … but do you know exactly what’s in your chili recipe? Comfort foods like chili can often be loaded with calories and fat. Just because winter is coming does not mean you have to put on your own “winter coat” — an extra layer of chubbiness.

This Spicy Beef and Black Bean Chili is one of my favorite go-to healthy meals that’s quick with a kick.

Making Recipe for Chili

People always think that if you’re trying to eat healthy, you have to stick to chicken and fish. The truth is if you eat the right cut of beef or pork, it’s just as low in calories. You need to choose a lean cut of meat, like the sirloin used in this recipe. Make sure your package of meat has a lean-to-fat ratio of at least 90/10 percent.

I have peace of mind when I know how many calories are in a recipe (unless I’m indulging, then I don’t want to know!). One serving of this chili is 298 calories.

It takes around 12 minutes to cook start to finish, so cross the “healthy cooking takes too long” excuse off your list!

You can definitely make your own taco seasoning with a variety of spices. Here’s a recipe (http://allrecipes.com/Recipe/taco-seasoning-i/detail.aspx) or you can use canned chipotle peppers or fresh jalapenos to add a little spice.

OK,how about some homemade split pea soup??I use a special brand of ham hock, commericial split peas, some diced onion of course some garlic and some sliced carrots, cook the soup without the carrots for about four hours in a slow cooker then add carrots, and cook another hour or until soup is thick and smells wonderful. Serves many people!!

Be sure to separate all the ham from the bone and put the meat back in the soup mix.We really do love this soup especially in the winter months.it also freezes just fine. HR in Selma,Oregon
