We challenged Tablespoon bloggers to choose a classic recipe from the “Heirloom Recipes and New Twist” section of the brand new Betty Crocker Cookbook and throw down their own spin to share with you.
Today’s twist: Pastrami Patty Melt Sliders, CheekyKitchen’s version of Betty’s classic Patty Melts with Smothered Onions.
Remember the first time you ate a patty melt? How shockingly delicious that seasoned patty of ground beef tasted, all slathered in caramelized onions and served up on rye bread? Well, prepare yourselves. Because we’ve topped the classic patty melt with layers of pastrami and served it up on teensy tiny slices of cocktail bread to make insanely perfect and totally incredible Pastrami Patty Melt Sliders.
Intrigued? This recipe is super simple and so fun to make. It’s based on the tried-and-true Betty Crocker Grilled Patty Melt with Smothered Onions classic recipe, which you can find in Betty’s latest (and most beautiful!) cookbook. You’ve got to get yourself a copy!
As soon as you get the cookbook, flip the shiny pages, drool over the gorgeous photos, then flip to page 316 and mix up a half-batch of Patty Melt ground beef. (Or you can find this recipe on Tablespoon, too!)
To make these sliders, you want to start with that classic, perfectly seasoned patty melt meat.
Shape the meat into bite-sized burgers, and cook them with some thinly sliced onions on a hot grill pan.
Add pastrami. Mounds of it. Then, add cheese. Always cheese.
Then, you’ll need a mini loaf of rye bread. Most grocers carry these loaves by the gourmet cheese section near the deli. Once you get them, toast up that bread just a bit.
Hold yourself back. This is getting good.
Once you’ve prepared the meat, the bread, the awesomeness, put it all together.
Hold it all together. Ready the mouth. And bite. The next step here would be to share. There are plenty of these adorable, scrumptious sandwiches to go around at your next game day celebration or neighborhood party.
But then again, no one has to know that. Share or keep them all for yourselves. Or sleep with them under your pillow.
