National Cake Day is November 26. And here’s the perfect way to celebrate…

Just when you thought Saturday mornings couldn’t get any better, these Cake Batter Pancakes enter the scene.

But I couldn’t wait until Saturday to make these. I made them on a Tuesday afternoon because…well, what a better way to get over the midweek hump? Cake…Batter…Sprinkles…Pancakes. Amen.

I first saw these over at How Sweet It Is, where Jessica shares my love for cake-batter flavored foods.

The thing is…life isn’t always rainbows, but with a generous splash of sprinkles it can be.

Batter for Cake Batter Pancakes

Pancake batter is infused with cake batter flavor with the help of a Betty Crocker cake mix and baked up into light and fluffy pancakes. Don’t they look almost too good to eat? Almost…

As if cake batter pancakes weren’t enough to put you into sugar euphoria, I topped them with a vanilla glaze drowning in sprinkles.

I definitely think these are made by the drizzle. It really enhances the cake batter flavor.

@Anon, It’s hard to generalize for all pancake mixes but I would say add about 1 cup of yellow cake mix to every 1 1/4 cups of pancake mix.

I made these and the pancakes turned out really thick (tall). The consistency was more like a soft, thin scone, very light in color. The sprinkles turned the glaze green. Still, we enjoyed eating them, but about 2 pancakes per person was plenty. I’m really more used to buttermilk-type pancakes. HOWEVER… I pulled the leftovers out of the fridge today and made pancake sandwiches with raspberry jam and vanilla frosting in between. Holy cow, these might be my new downfall…

Made this for my kids and they loved them! (so did I) Made them again w/chocolate cake mix and chocolate sprinkles. They tasted like a brownie. We took chocolate frosting from a can and microwaved it for a short time to make chocolate glaze. They were fabulous. Thanks for such an awesome recipe!

Yes. A whole cup of flour and sn additional 1/4 cup.

I just made these and they were wonderful. I quadrupled the recipe and used 2 boxes of cake mix instead of 4 cups. I measured the cake mix and it came to 7 cups! I also used alot of milk. The only problem I had was with the frosting having lumps of margarine. Next time I will use an electric mixer to get it to mix together more smoothly.

@Anonymous: don’t bash the recipe, bash the cook. you probably made it wrong. a good cook (no matter how inexperienced) can usually predict how it’s gonna come out and edit the recipe to their taste, you obviously didn’t, so stop complaining. :)

Wow those are some strong words. What didn’t you like about them? My family enjoyed them and people raved about them over at how sweet it is where I got the original recipe as stated above.

Well a different brand definitely wont work :) Just kidding. I like yellow cake mix because I feel like it has a stronger cake batter flavor but white would work too. You may have to add more of it to get the flavor you are looking for.

@Anonymous, I’m so sorry you didn’t like these. My family loved them so maybe we can figure out what went wrong. You can add more cake mix to the batter if you want a stronger cake batter taste. If the glaze was glue like, it probably needed more milk so that it has a runnier consistency.

The ingredient list makes it difficult to know just how much milk to add, which may have had a hand in ruining the recipe for a novice chef like myself.
