Tres Leches Cake will jingle your bells — it’s all jazzed up for the holidays with EGGNOG as one of its three milks!
Tres Leches cake is a classic South American goodie — a fairly average cake, soaked rich and full with three types of milk.
This Eggnog Tres Leches Cake is a holiday version of the classic dessert.
It’s surprisingly simple to make, and tastes so good that my neighbor ate four slices of it when I toted this finished cake on over to her house. (I can not be trusted with such a thing on my counter-top!) Here’s how to get one on your counter-top, stat.
Grab a box of Betty Crocker cake mix. Add an extra egg and cut back a bit on the water to achieve the perfecto final texture…a cake that holds up beautifully to three different milks being poured the heck inside. It’s happening.
Stir that cake batter up until smooth.
Generously grease two 9″-round cake pans with nonstick baking spray. Pour the batter evenly between both pans, then bake until golden brown.
Once your cakes are cooked and cooled, pour a bit of eggnog right on top of both cake rounds.
Then some evaporated milk goes on top of the eggnog.
Finish it all up with a good heaping drizzle of sweetened condensed milk. Wash your forks, people. You’re going to need them.
Admire your creations, then toss them in the fridge for a few minutes to let that milk seep in and find happiness.
Frost your cakes up some serious fresh whipped cream.
Second layer goes over the first, then a pretty layer of cream covers the rest of the cake.
For a fun garnish, peel cucumber skin into long strips, then cut the tips into pointy little “V” shapes.
Arrange these “holly leaves” on top of the cake with cranberries or raspberries placed all around.
Slice. Serve. Stand underneath the mistletoe and let all your holiday wishes come true!
