Everyone’s always looking for that one little secret that will magically help them lighten up meals with minimal effort. Well, guess what? I have one: Eat more veggies on your sandwiches.
Loading up sandwiches with sliced cucumbers, thin peppers, carrots, lettuce, tomato and more adds flavorful bulk to the sandwich without adding a lot of calories. And seriously, when you layer on a bunch of your favorite vegetables, that sandwich will feel downright decadent.

It’s a tender, juicy marinated chicken breast with carrot shreds and cucumbers on whatever bread or roll you want. If you want to keep those calories down, choose a flat bread or flat roll with low calories. They often have about 100 calories each and are hearty enough to accommodate a sandwich like this.
If you are making this for work, make the marinated chicken the night before (it needs to marinate for about 30 minutes) and then either reheat it at work and assemble the sandwich or eat it cold. It’s delicious either way.
