I’ll tell you what I diddly dang love. Soup. I love soup. I am so serious about loving soup.

I love tomato soup. Roasted tomato soup. A roasted tomato soup that tastes like the wings of salvation. A roasted tomato soup that calls for only a few ingredients that you can actually pronounce. A roasted tomato soup that comes together so fast you’re still left with ample amounts of time to craft Valentine gifts out of dumpster dive finds.

Oh that’s just me? Oh.

True love makes people weird. What can I say?

Grab ze goods. 2 cans of Muir Glen’s fire-roasted diced tomatoes, 5 romas, garlic and smoked paprika. The basil is for garnish, but I included it here so you would think it was pretty.

Slice up your tomatoes into wedges and drizzle with oil, paprika, salt and pepper. Leave the garlic in their skins. They’ll get all roasted and sweet and buttery and you’ll flip.

Roasted Tomatoes and Garlic

Squeeze the garlic out of the skins. Resist licking. Toss those and the tomatoes into a food processor with your canned tomatoes. Pulse until you have a nice pureed sauce. Pour into a saucepan and start simmering for a quick sec.

In the meantime, make your parmesan crisps. I FORGOT to photograph the process because I had my eagle eye on them, hoping they wouldn’t burn. Oops. But anyway, place a heart-shaped cookie cutter on your best non-stick pan and place little sprinkles of grated parmesan inside the cutter. Once the cheese starts to melt and brown, remove the cutter, flip and brown on the other side for about a minute. And you get….

These! Cheesy and crunchy all at once. Mmm.

Baked Cheese Hearts for Tomato Soup 

Simmer the soup for about 10 minutes, if that. Just until it’s all heated through and gorgeous. Season with salt and pepper.

Pureed Tomatoes for Soup

Ladle into bowls and serve with your homemade crisps! And the basil. Can’t forget the basil.
