Strawberry Gelatin Salad is a classic dessert that’s always the first thing to go at our family barbecues and get togethers.

I thought the whole concept was a little strange the first time I heard about this dessert, but over the years it’s definitely become one of our family favorites. Before you get grossed out, there’s really nothing salad-ish about this dessert. Although we do get crazy ideas over at Tablespoon, we haven’t gone completely bonkers by mixing lettuce and gelatin here. Phew!

To update the classic version, we made our Strawberry Gelatin Salad into individual portions by layering them in little plastic tumblers. That way if you’re making these for a backyard barbecue, clean up is a cinch!

It all starts with a layer of buttery granola, followed by a sweetened cream cheese layer, and topped with strawberry gelatin with sliced strawberries inside.

Lighten Up!

You can easily make this dessert lighter by using sugar-free gelatin and substituting light cream cheese and light whipped topping. I’ve tried it both ways and can hardly tell the difference between the two!
