That’s a wrap, folks! Make that a rainbow wrap!

I admit that I am a hopeless lover of color…color in my decorating, color in my art and of course, color in my food. I especially love going to the market in the summer and trying to bring home a little of every color in fruits and veggies. Beautiful and delicious.

And in the case of these wraps…the color is also good for you!

I ended up going with strawberries, oranges, pineapple, kiwi and blueberries to make my little rainbow for these wraps. But any other fruits in these colors would also work (such as raspberries, mangoes, bananas, blackberries, cherries, etc.).

However you make them, I guarantee that these are total crowd-pleasers for kids and grown-ups alike. So read on for the simple recipe to “taste the rainbow”!!!

First you need to choose your rainbow fruit, and then cut them up into similar sized pieces.

Next is the fun part! Spread a few tablespoons of cream cheese on your wrap, leaving a 1/2-inch border. Then layer the fruit in strips to create a “rainbow.”

So pretty you almost don’t want to roll it up!

So instead you take another photo!

And then finally roll it up to form a wrap. The cream cheese will help keep it together, too, so that it doesn’t unroll all the time. Then take a bite and enjoy all of the sweet, colorful, fruity goodness!!!

@Anonymous: I actually used whole wheat tortillas here, but you can use whatever kind you’d like!
