I think this definitely falls into the “kicking pasta up a notch” category…

The rainbow recipes on Tablespoon continue today with this fun new one – Rainbow Pasta!

Plain spaghetti was by far one of my favorite foods as a kiddo, especially being an uber picky eater. But I’m pretty sure our spaghetti never looked like THIS!

In fact, if it had, I’m imagining my mom could have hidden all sorts of extra veggies and good stuff in there without us kids noticing.

But regardless of what sauce, veggies, or other ingredients you might like to serve with this pasta, the fun rainbow technique will definitely make this rainbow pasta the talk of the dinner table.

And to complete the “rainbow”, I’ve also included a quick tutorial for making these quick and easy little Parmesan “clouds”. Too cute!

Here’s the how to…

First, you begin with the main ingredient: CARBS. Err, I mean, pasta. I used linguine, but you can pretty much use whatever shape of pasta you’d like.

Cook it al dente according to the package instructions. But while it’s cooking, prepare your large Ziplock bags of food coloring.

I used six colors (red, orange, yellow, green, blue and purple), but you can use however many colors you prefer. Add about 20 drops of food coloring and 2 tablespoons water to each bag.

Then once the pasta is done, drain it and then immediately run cold water over it in a strainer or colander to halt the cooking.

Transfer the pasta, portioning it as you go, into the bags of food coloring. Then seal the bags, and mix the pasta and food coloring until well-combined. Let each bag sit for at least a minute.

Then one by one, return each bag to your strainer, give the pasta a second cold water rinse, and then transfer the pasta back into your pot. When all of the colors of pasta have returned, toss the pasta together until the colors are combined.

And then serve! You can top with your favorite sauce or toppings.

Or if you want to be cute and add some “clouds” to your rainbow of pasta, you can make these easy Parmesan crisps!

Just preheat your oven to 350 degrees. And then, covering a baking sheet with a Silpat mat or sheet of parchment paper, place about 2 tablespoons shredded Parmesan cheese in an even circle. (I used a cookie cutter to make my shapes.)

Then bake for 4-5 minutes until the cheese is melted and the edges just begin to brown…

And voila! Rainbow pasta with Parmesan clouds.

Thanks for the tip! I did rinse them in warm water because it was a warm dish we were eating maybe that made a difference. I’ll try cold water next time. Still, it was rainbow food and awesome for the kids when it was fresh. My lunch that evening was what was muddy looking ;) And to Anonymous: We didn’t get color all over our mouths, but that might have to do with type of color you use. I used gel color in a cake one time–very saturated amount–the cake was bright blue and that dyed my family’s mouths.This time I used the little droppers of liquid. And it was fine. I don’t dye my kids food all the time, but for an occasional treat, it can really add some wow factor and dyed mouths just add to the fun !

@Anonymous We didn’t have problems with the food coloring bleeding after it had been rinsed, but there’s always a chance it could. :)

So just as I, who steers clear of fermented products would never go on a blog and post the OH so helpful comment “vinegar is no good for the Type-O digestive system,” I think if you don’t want your kids to eat food coloring you should not GIVE your kids food coloring. And you should also never allow anyone else to feed them anywhere ever, because we inadvertently eat so much of the stuff because of its inclusion in absolutely every processed product.


Me? I won’t be making this any time soon simply because I find blue an unappetizing color. But come the next Pride brunch, you can bet this stuff will be tossed with olive oil and garlic and freshly shaved Parmigiano for my contribution to the covered-dish free-for-all. And if anyone complains about the amount of food dye they’re ingesting because of my evil, once-in-a-blue-moon treat, I’ll pay for their tox screen so they can allay their fears.

@SuperCat Thanks for giving it a try! And yes, I found it helped to give the pasta one final cold water rinse before blending them together. But so glad they enjoyed it! :-)

My kids loved it! But I had trouble with the colors bleeding together once I mixed them all up. My pretty pasta got kinda muddy looking. However…I put a lot of vegetables in it and my kids cleaned their plates and it was quite the conversation starter during break at school.
