I made these using the red quinoa and while they looked suspiciously untasty, they were delicious! I too spiced it up a bit and added pepper, cayenne pepper, and garlic pepper. We dipped them in Sriracha and they werer phenomenal!

I made these tonight for me and my mom. We used some thicker cookware bowls (like unto the ceramic ones salad dressings are served in in restaurants) since we didn’t have a muffin tray. These bowls are about the size of a 1 cup measuring cup. Perhaps this is why it took an hour to cook, literally. They were also a smidge on the bland side, so I sprinkled a little bit of pepper and salt on top. That worked, and they turned out pretty delicious. When I make the leftovers, i’m going to mix the salt and pepper in with the egg, and perhaps a little big of garlic powder (or maybe i’ll use garlic salt). Otherwise, with a little bit of spices these are pretty delicious, a good way to get in your veggies (try things other than spinach!), and very practical. Also, they make quick and easy breakfast and lunch meals. After the spice to punch up the flavor, i’d give it a 4.5 star out of 5. Definitely worth a try! =]
