One potato, two potato, three potato EAT.
We need to talk about something that occurred in America in Kansas in my neighborhood on my street in my house in my kitchen in my slow cooker but only a short time ago.
I needed to run errands. Christmas errands. The kinds involving wrapping paper, pretty bows, scotch tape and a bottle of vodka. Oh you hear me.
But see, I wanted potatoes when I got back. But not like blah baked potatoes. I wanted casserole-y-ness-action to land in my face promptly upon my return. It just had to happen. Or else someone was going to get their gift wrapped in my tears and sorrow.
So freaking check this out – did you know you can put cut up potatoes in a slow cooker for a few hours, add a Progresso creamy recipe starter to it, top it with cheese, bacon and chives and just like that it’s a Christmas miracle all up in your life?
You know what, I can’t even take it, let me just walk you through how to make this Slow Cooker Baked Potato Casserole.
It all starts with a couple of pertaters. AND, let me stop real quick and explain something. This was just for me. Okay me and Aaron. Okay just for me. If you want a much bigger serving, just double or triple the recipe and it’s another Christmas miracle, I tell you.
Give ‘em a good peel and a rough dice.
Position them down in a small slow cooker and drizzle a little oil on top. Then go live your life, run your errands, get your vodka and come home.
Check it out! About 3 hours later they’re pretty soft, so you’ll just take a fork and mash mash mash.
Then grab a can of Creamy Three Cheese cooking sauce and pour abouuuut half a cup in. *Remember, if you’re making a bigger serving, pour more! Keep pouring and mashing until it just feels right in your heart.
Here it all mashed up together and merry.
Now, what I did was let it cook a few more minutes while I prepared . . .
Some bacon and chives! Annnnd, not pictured, grated cheese. Oops.
So you can do this two ways. A) you can sprinkle the cheese right on the potatoes IN the slow cooker and pop it under the broiler until it’s all nice and bubbly, OR B) You can transfer the taters to a serving bowl, then top with cheese and give it good blast under the broiler. Either way is fine. You’re still a good person.
Yes. Garnished with bacon and chives and baby kittens and puppies.
