Tis the season of comfort food, but as fate would have it, it’s also the preshy time of the year when we try to get our faces skinny and start eating right. Thankfully, this EZ Chick ‘n Veggie Mac ‘n Cheese recipe has both bases covered!
This veggie-packed mac and cheese has a leetle bit of pasta, a lot of chicken, and oodles of veggies to make your New Year’s extra schmexy this year. Let’s get cookin’, shall we?
La la laaaaa! Any ingredient roundup this easy is a roundup we want in our life. Grab, snag, and prepare to fab!
So you’re going to startsie cooking the pasta from a box of Betty Crocker Mac and Cheese, and while that’s happening on one burner, you’re gonna heat up a skillet with butter on the other burner. Add purple onions to this skillet, because theys pretty.
Now, it’s time to make us a roux. Basically, to make a good roux, we need butter and flour turned into a paste. Only we’re gonna get extra snazzy this time and go butter, flour, and that packet of cheese sauce from your box of mac and cheese. Why? Because we’re awesome like that. We’ll also need some milk. Because we’re awesome like that, too.
This is when it gets all happy up in ‘ere, because hey yo. More cheese. Yep. More. Cheese.
Add those veggies! Add those veggies! (If only adding veggies was this worthy of cheering. Whatevs, we’ll take what we can get.) Toss in some chopped chicken, too. Why? Because we’re awesome like that.
Now you’re gonna grab that pasta that’s been all cooked up and tenderized.
Once the macaroni is stirred into the sauce, you’re gonna need some bowls!
