Pot roast is perfect this time of year. But make it in your slow cooker with a fire-roasted tomato sauce, and it’s beyond perfect — it’s irresistible!
Everyone loves a good pot roast, but how do you do it just right every time? Well, you keep reading! Because, we’ve perfected a gorgeous twist on the perfect pot roast, and you can get it all up in your kitch in no time at all!
This recipe starts with a very basic collection of ingredients. roast, onions, butter, fire roasted diced tomatoes, and Progresso’s Creamy Garlic Recipe Starters sauce. It’s the making of a love affair, I tell ya.
Start off by melting your butter in a hot skillet, then browning a lightly-salted roast on all sides. The secret to a proper browning is to ensure your skillet and butter are hot before tossing the roast into the pan. Then, use a fork to rotate the roast and brown it on all sides. Transfer to a slow cooker, once browned.
Now toss some onions and chopped fresh garlic into your hot skillet, stirring and cooking them until they’re softened. This step should take about 1 minute.
Grab some cab (Cabernet Sauvignon, to be exact) and toss it into your skillet. Simmer this mixture until the wine is reduced in half.
Now add a can of Progresso Garlic Recipe Starters, and a can of Muir Glen Fire-Roasted diced tomatoes. Toss the sauce on top of your roast, and add a bunch of chopped carrots and celery around the sides of the roast. Cover and cook for 5-7 hours on high, or 6-8 hours on low.
Slice your roast into giant, hunky pieces of meat. Serve the meat and sauce over pasta, mashed potatoes, or in bowls with crusty French bread to sop up the sauce. This deliciously simple, splendid recipe is really that easy!
