Just 10 minutes of prep to make comforting lasagna…in a soup!
Did anyone else grow up reading the cartoon Garfield?
I never really got into comics as a kid, but I did have a fondness for a certain striped orange cat who had a little mischievous streak.
So every morning at the breakfast table, my dad would slide over the newspaper so that I could read about Garfield’s latest escapades, which usually involved his favorite food….(anyone?)….lasagna!
Like most Americans, Garfield’s total idea of comfort food is lasagna. Although if he had to take the time to layer and prep an entire pan of lasagna ingredients, I’m thinking he might not have it quite so often. Lasagna can be a lot of work!
But for any of you who also love those comforting Italian flavors, here’s a fun alternative – Lasagna Soup made simple in the slow cooker!
It packs all of the same delicious ingredients but this time no layering or baking is required. Just let your slow cooker do the work and this yummy soup is ready to go with less than 10 minutes of prep. Super simple, and so tasty.
Here is the how-to!
Begin by adding all of the ingredients except the lasagna noodles and cheeses. Give them a quick stir to combine, then cover and cook on low for 7 hours. Voila!
Stir in some broken up lasagna noodles, then cover and cook for an additional 30-45 minutes until al dente.
Ladle the soup into your serving bowls, then garnish with a dollop of ricotta cheese and then sprinkle with Parmesan.
So simple, eh?
